Rice-less Burrito Bowls

Eric introduced me to the wonders of taco salads and burrito bowls.  It’s easy to make a Paleo meal with most of the typical ingredients.

Some people are interested in Zone so I’ve listed the 1 block portions next to each ingredient.  All Zone blocks are calculated from the CrossFit Journal, May 2004.

Shopping List:
- 1lb. lean ground beef or turkey (1.5 oz. = 1 block protein)
- 1 packet Taco seasoning, make sure it’s just spices and does not contain any gluten or sugar!
- 1-2 avocados (1 tbls = 1 fat block)
- Romaine lettuce (4 cups = 1/2 block carb)
- Salsa (1/2 cup = 1 block carb)
- Onion (2/3 cup = 1 block carb)
- Cilantro and lemon for flavor

1. Brown ground beef in a pan. Drain fat. Add taco seasoning and 2/3 cup water and simmer for 8-10 minutes.
2. Put lettuce in bottom of bowl and build salad on top.
