Salsa

Since my last post was for Rice-less Burrito Bowls I figured I should follow it up with a fantastic salsa recipe.  This one is from way back.  Thanks Mom.

In a Cuisinart (or food processor) chop:
- 2 cloves garlic
- 1 jalapeno w/ seeds (2 for medium-hot spicyness)
Add:
- 1 small/medium onion
PULSE until onions are small pieces (don’t liquify)
Add:
- 1 cup cilantro, fresh
- 1/8-1/4 cup lime juice
- 2 large cans drained whole peeled tomatoes (the 32 oz. can size)
PULSE until all the tomatoes are chopped and the consistency is just less than chunky.

My favorite twist is to substitute green onions (one whole bunch) for the onion.
