This is a great, transportable, and quick to cook meal base. Throw it in a tupperware with some meat and nuts and you’re golden. It’s even better when stacked on top of a burger or a couple fried eggs.
1. Heat coconut oil in pan on low to medium heat.
2. Add ginger and let cook for 30 seconds
3. Add onions and saute for 15 minutes until soft
4. Add apples, spinach, and spices
5. Cook until spinach has wilted through
Ingredients:
2 onions, sliced into rings
2 apples, sliced and diced into small pieces
4 handfuls (or more) of spinach
1 teaspoon coconut oil
1 teaspoon minced ginger
1 teaspoon coriander
dash of cinnamon
